Twelve light brown muffins arranged on a cooling rack

My mum's been making muffins for months, and I kept going, "I want muffins :(" But unfortunately I have to make the muffins if I want muffins because I am an adult and no one has invented teleportation yet. So! I finally made muffins last week!! They were really good - surprisingly subtle in flavor considering I find both banana and peanut butter tend to be rather strong flavors. Not mad about it at all though, I was just a bit surprised.

I've included the recipe behind the read-more if anyone's interested. It's a quick-bread recipe, so it can be used for muffins or bread, whichever floats your boat. I apologize in advance for my American measurements XD


Banana peanut butter bread/muffins

Ingredients:

½ C. shortening (or an equal amount of softened butter)
1 C. sugar
2 eggs
1 tsp. Baking soda
1 C. flour
1 C. wheat flour
1 C. mashed ripe banana (about 2-3)
1 Tbsp chunky peanut butter

Directions:

Heat oven to 350 degrees Fahrenheit. Grease and flour 8” loaf pan or muffin tin (I completely missed the flour bit here, and they popped out of the tin just fine). Cream shortening and sugar. Beat in eggs. Stir in baking soda and flour. Stir in bananas and peanut butter. Turn batter into pan. Bake for about 20 minutes for muffins and one hour for bread.
